Pasta Sauce

The title tells it all.  It really does take 15 minutes and the sauce is better than anything on the grocer shelves.  I found this recipe on Epicurious and it is by Anna Stockwell.  I looked her up and she has a very impressive cooking resume.  

It says it makes 4-6 servings.  

Ingredients:

1/2 kosher salt

1/2 C EVOO

2 large garlic cloves, finely chopped

3 pints cherry tomatoes

1/2 t black pepper

Pinch of sugar

1 C coarsely chopped basil

Freshly grated Parmesan

Instructions:

  1. Cook 1# pasta in a large pot of boiling slated water, stirring occasionally, until al dente, drain pasta, reserving pasta water, and transfer to a large bowl.  Tip:  Jacobsen Salt Co. makes a product called Disco Di Sale.  It perfectly salts your pasta water.  It is fantastic.  You can buy on line.  Williams Sonoma periodically has it in stock, but they are wussy about restocking if it doesn’t fly off the shelves.  I’d love to know if those $500 pots fly off the shelves.  
  2. Meanwhile warm 1/2 C EVOO in a large skillet (12” diameter)or wide heavy saucepan over medium-high heat.   
  3. Add 2 large garlic cloves, finely chopped, then 3 pints of cherry tomatoes, 12 t black pepper, a pinch of sugar, and 1/2 t kosher salt.  Cook pasta sauce stirring occasionally, until tomatoes burst and release their juices, 6-8 minutes.  (I had 2 pints of cherry tomatoes from our farmers market.  Jim grabbed a 3rd at Publix.  I noticed that the farmers market tomatoes burst faster than the grocery store ones.  I wonder if they have genetically modified the ones they grow commercially to have thicker skins for shipping purposes.)
  4. Toss cooke pasta with cherry tomato sauce; if needed, this sauce with a little reserved pasta water.  
  5. toss in 1C coarsely chopped fresh basil and top with freshly grated Parmesan.  

This recipe is definitely a keeper.  Speaking of keepers, all of my about 10 years of recipes are gone.  The builder of that site was not ethical about what he was doing.  This time I used the GoDaddy company.  The graphics are mine and it was difficult to make them understand that I am not selling anything, planning to run a cooking school, or looking to reach out beyond my friends and interested family members.  In other words I do this for me.
